When you are in quarantine you need to use what you have on hand to make breakfast a level better! This recipe was super easy and flavorful while being smart with my usage of ingredients.
Ingredients:
1/2 batch of Crepe Batter (Found mine in Better Homes and Garden's cookbook so if you are in need of one you can find it at )
Filling:
1/2 block of Cream Cheese
6 large Strawberries
1/4 cup Powder Sugar
1 tsp of Vanilla Extract
1 tsp of oil (coating pan)
Preheat skillet to medium low heat, take either a oil coated paper towel or a brush and lightly oil the pan. Take a ladle of the batter and spoon it into the pan and swirl around to get an even coating on the pan. Cook it for about two minutes and using a thin spatula flip carefully unto the other side until golden brown. Since this is so thin the crepes will cook quickly so you have to babysit them. Once you have the amount you want to serve let me sit to the side and make your filing. Combine softened cream cheese, strawberries, and vanilla extract together. I like my mix a bit chunky so I leave the strawberries in bigger pieces before blending but if you want a fine mix you can dice smaller then blend. Spoon mix unto each Crepe then dust the plate with powdered sugar before serving. Enjoy!
