Homemade Cinnamon Rolls



Dough

2 cups of flour (additional flour needed for rolling out)

1/4 cup of Milk

1/4 cup of butter

1/8 cup of sugar

1 1/2 teaspoons of yeast

1/4 teaspoon of salt

1/4 cup of water

1 egg


Filling

2 tablespoons of cinnamon

2 tablespoons of butter

1/4 cup of brown sugar (if you desire for filling)


Frosting

1/2 cup of powdered sugar

1 teaspoon of milk

1/4 teaspoon of almond extract and vanilla extract each

1 teaspoon of softened butter


Add yeast, warm water and sugar to a large bowl. Let that bloom for 10 minutes, while that is blooming measure out the flour (keep separate), sugar and salt and set to the side. Melt in microwave or on the stove the butter and milk. Once the yeast has bloomed crack the egg into the bowl and then add in the milk and butter. When those are combined together add in the dry ingredients except for 1/2 of the flour. Mix together then add in the 2nd 1/2 of the flour to the mix. Start to knead the dough in the bowl and if you want you can transfer to a floured surface to continue to knead it. If you are short on counter space you can still knead the dough in the bowl. Knead for about 5 to 10 minutes until the dough is smooth and shiny. Transfer the ball to an oiled bowl and cover with cling wrap to let the gluten develop and gases to form for an hour to hour and 15 minutes. Once the dough has doubled in side gently press to release the air and place until a floured surface for roling it out (can use a large floured cutting board as well). Roll out until the rectangle is about 1/4 inch thick. Brush on melted butter and sprinkle cinnamon and brown sugar (can omit if watching sugar intake or prefer not such a sweet roll). Roll the dough into a log and use dental floss to cut the rolls to the size you want. Place in a greased pan and let rise for 30 minutes. Place in a preheated 350 degree oven for 25 minutes or until browned. While there is 10 minutes left on the time make the frosting by whisking all of the ingredients together. Once rolls come out of the oven give it about 3-5 minutes then spread the frosting over the top of the buns. If you are like me I also like to do the frosting while they are just out of the oven and spread a bit on the tops so it can soak in then let them cool and add the rest of the frosting. Enjoy!
