Double Peach Cobbler

This recipe is a hit at picnics, cookouts and reunions. The flaky buttery crust paired with the spice and peaches is refreshing and you will go back for seconds!



Recipe Measurements :

1 Can of Peaches in Heavy Syrup

1/2 tsp of Nutmeg

1 tsp of Cinnamon plus more to sprinkle on crust

1 tbsp of Honey or Agave Syrup (more if you prefer it sweeter)

2 pre-made pie crust

1 egg

1 stick of unsalted butter of your choice

1/2 tsp of vanilla extract

Vanilla Ice Cream of your choice


Pre-Heat Oven to 375 degrees. Butter baking dish and place remainder of the butter into the sauce pan. On medium-high heat add peaches, vanilla, honey (agave) and spices to the sauce pan. Bring everything to a boil to caramelize syrup then turn off the heat. Measure out the bottom crust and line the pan with the pie crust. Scoop 1/2 of the peach mixture into dish and cover with a layer of pie crust, make a couple of cuts in order to vent the mixture. Bake mixture for 15 minutes then take it out of the oven. Repeat steps of layering peach mixture then top pie crust (be careful since pan is hot). Vent and add decorations if you would like. Brush egg wash onto the top crust and sprinkle with cinnamon and nutmeg.

Return back to the oven and continue baking for 45 minutes, if the pan seems like it would overflow place a sheet tray under the pan. Let it set for 10 minutes then serve warm with vanilla ice cream. Enjoy!
