Breakfast Burritos

Every family has that recipe that instantly makes them feel like a kid again, this is one out of a few that my Mom has that we flock to her house during special occasions. Every Christmas she would make these and the world would be right. Filled with piping hot sausage, hash brown potatoes, scrambled eggs and gooey cheese sauce these will make your belly warm. Great for freezing and having a hearty breakfast when you need something on the go.


Recipe Measurements

Serves 5

1 package of Flour Tortillas (8-10 shells)

1 16 oz of ground Breakfast Sausage

6 Eggs

½ Canola Oil

16 oz of Hash Browns (cubed)

5 oz of cheese spread of your choice


Things you need:

Frying Pan

Small Sauce Pan

Knife, Cutting Board, Spoons and Spatula

Display Tray

Oven Safe Pan for baking


Directions:

Pre Heat oven to 350 degrees, as oven is pre-heating cook your sausage over medium high heat until the sausage is fully cooked. Set Sausage to the side and add oil to the pan. Cook potatoes until they are fully cooked and crisp while turning continuously while cooking. Add the sausage back to the pan and add your eggs to scramble with the potatoes and sausage. Once the eggs have fully cooked turn off the heat and start to prepare the tortillas. Spread about 1 teaspoon of the cheese spread on each tortilla and add more if desire. Add meat mixture to the middle of each tortilla and secure with a toothpick if desire. Bake for 5-10 minutes or until tortilla starts to turn lightly golden and cheese spread is melted.
