Apple Cider Donut Holes Recipe
1/2 cup of Sugar
1/4 cup of Brown Sugar
1 egg
1/4 cup of buttermilk (homemade 1/4 cup of milk with 1/4 tsp of lemon juice or vinegar)
1 tsp of Baking Powder
1/4 tsp of Salt
1/2 tsp of Baking Soda
2 1/2 cups of Flour
1/4 Stick of Butter
1 cup of Reduced Apple Cider
1 tsp of Pumpkin Pie Spice
1/2 tsp of Cinnamon
Sugar mixture:
1/2 cup of Sugar
1/2 tsp of cinnamon
Oil of your choice for frying
Mix all of the dry ingredients together in a large mixing bowl, using a mixer add in the egg, buttermilk and apple cider vinegar. Put in the butter and continue to beat on low until everything is incorporated. Let mix cool for minimal 1 hour to overnight. Scoop mixture into small balls (about the size of a nickel since they grow as they cook). Fry in 350 degree oil until they are golden brown. I recommend doing one as a tester then adding the rest in once the oil has been adjusted. Drain on paper towel and coat in cinnamon sugar mixture before eating all of them within a blink of an eye!
