2 tbsp. of Lemon Extract
7 UP Pound Cake Recipe measurements:
3 cups of flour
3 cups of sugar
1 ½ cups of softened butter plus 2 tablespoons to coat pan
1 cup of 7 UP
2 tbs of Lemon Extract
5 eggs
Cooking Spray
Optional Glaze:
1 cup powdered sugar
¼ cup of 7 UP or Milk
½ tsp vanilla extract

Preheat oven to 325 degrees. Cream together all butter but the two tablespoons to be set aside and sugar. After the butter and sugar have been creamed together add in 1/3 of the amount of flour to the bowl and whisk on low. Add in batches of the flour until all of the flour is incorporated. Add in eggs to the mixture one at a time as well. Once mix has been scraped on the bottom of the bowl with a spatula to ensure no flour is remaining add in 1/2 of the 7 UP amount to the mixing bowl and whisk. Whisk in remaining 7 UP in the mixture then the lemon extract. After all of the ingredients have been mixed together use remaining butter on the pan of your choice (I preference Bundt pans) to coat it. You can also use cooking spray or both depending on your preference. After coating the pan pour the batter unto the pans and spread with a spatula to make it bake evenly. Place in the preheated oven and bake for 60-75 minutes, use a skewer, wooden chopstick or toothpick to ensure that the cake is done. Let the cake cool for 10-20 minutes then place cake plate on top of Bundt pan and flip the cake carefully out of the pan. Slice and enjoy!
